I'm in love with this recipe. I changed it slightly by using almond flour in sub of peanut flour. This is probably the best baked good I've made so far! I'm not a baker and I know that. I'm pretty awful with anything that has to do with the oven. Even my non-ketoers in the household loved it. It was very moist - I also made a loaf instead of the muffins. 5 out of 5 stars! These are amazing!

Dark chocolate Walnut cookies
I love chocolate. It's just me. I could eat chocolate all day. Since I've been doing keto I haven't had that much besides the occasional 90% cocoa square. I found this gluten free dark chocolate cookie recipe. My Keto roommate and I decided to make them. The batter was a little thin at first, it will get thicker if you wait a few minutes before baking. It's a simple recipe! It would be hard to mess up. They looked super good when they came out but the dark chocolate flavor was a bit much for us. We've decided to use sugar free herseys next time. If you like bitter chocolate these are for you! I'm slightly sad I wasted all my walnuts on this recipe though. 2 out of 5 stars - I will try them again after I get some sugar free milk chocolate.

French Toast Cakes made with pork flour?
This
morning I decided I wanted something other than eggs/bacon for breakfast. I
guess I’ll make some cinnamon rolls! I just bought my first pack of coconut
flour and thought it would be a tasty reward for all my good keto work. I didn't realize I was out of wax paper until I was about to start mixing everything. There
went that idea! All I could think about was having some cinnamon rolls. I came
across this recipe on pinterest.
I wasn't sure about the pork rinds or “Pork
Flour” as I now call it. Blending up the batter was different, It was thick. I started
heating up my skillet, starting to worry about how it was going to turn out. It
was really dense and I had to shape it with my hand. Like the recipe says it doesn't bubble so just flip it after about a minute – I cooked the other side
for about a minute as well. For toppings I added butter and sugar free maple
syrup. These are the BEST pancakes I have made on Keto. My Fiance didn't even
notice the pork flour. He thought it was
a mix of coconut/flax. They tasted just like French toast! The recipe had about 420 calories (not including
butter)/2 net carbs. I will be making
these again – They’re also extremely filling. If you miss French toast give
these a try!
I
rate this recipe a 3.5 out of 5. Mostly because after they start to get cold
you can taste the pork rinds. I would say that’s the only CON of this recipe.
